Flatbreads made at home with parsley and chili flakes

Homemade Flatbreads with Parsley and Chili Flakes:

Ingredients:

  • 2 cups all-purpose flour (plus extra for rolling)
  • 1 teaspoon salt
  • 3/4 cup warm water
  • 2 tablespoons olive oil (plus more for cooking)
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon chili flakes (adjust to taste)

Instructions:

  1. Mix the dough:
    • In a large bowl, combine the flour and salt. Add the warm water and olive oil, mixing until a dough forms.
    • Transfer the dough to a floured surface and knead for 5โ€“7 minutes until smooth and elastic.
  2. Rest the dough:
    • Place the dough in a bowl, cover with a damp cloth, and let it rest for 30 minutes.
  3. Prepare the parsley and chili mix:
    • In a small bowl, mix the parsley and chili flakes. Set aside.
  4. Divide and roll:
    • Divide the dough into 6 equal portions. Roll each portion into a thin, round flatbread about 1/8 inch thick.
  5. Cook the flatbreads:
    • Heat a non-stick skillet or griddle over medium-high heat and lightly brush with olive oil.
    • Place one flatbread in the skillet and cook for 1โ€“2 minutes, until bubbles form and the bottom has golden spots.
    • Flip and cook the other side for another 1โ€“2 minutes.
    • Repeat with the remaining dough, adding a bit of oil as needed between batches.
  6. Add parsley and chili:
    • While the flatbreads are still warm, sprinkle them with the parsley and chili mixture. Press lightly so it adheres.
  7. Serve:
    • Serve warm with hummus, yogurt dip, or as a side to soups and stews.
