Homemade Flatbreads with Parsley and Chili Flakes:
Ingredients:
- 2 cups all-purpose flour (plus extra for rolling)
- 1 teaspoon salt
- 3/4 cup warm water
- 2 tablespoons olive oil (plus more for cooking)
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon chili flakes (adjust to taste)
Instructions:
- Mix the dough:
- In a large bowl, combine the flour and salt. Add the warm water and olive oil, mixing until a dough forms.
- Transfer the dough to a floured surface and knead for 5โ7 minutes until smooth and elastic.
- Rest the dough:
- Place the dough in a bowl, cover with a damp cloth, and let it rest for 30 minutes.
- Prepare the parsley and chili mix:
- In a small bowl, mix the parsley and chili flakes. Set aside.
- Divide and roll:
- Divide the dough into 6 equal portions. Roll each portion into a thin, round flatbread about 1/8 inch thick.
- Cook the flatbreads:
- Heat a non-stick skillet or griddle over medium-high heat and lightly brush with olive oil.
- Place one flatbread in the skillet and cook for 1โ2 minutes, until bubbles form and the bottom has golden spots.
- Flip and cook the other side for another 1โ2 minutes.
- Repeat with the remaining dough, adding a bit of oil as needed between batches.
- Add parsley and chili:
- While the flatbreads are still warm, sprinkle them with the parsley and chili mixture. Press lightly so it adheres.
- Serve:
- Serve warm with hummus, yogurt dip, or as a side to soups and stews.
