Instructions:
- Prepare the Dough:
- In a food processor or bowl, combine flour and salt. Add cold butter and pulse (or use a pastry cutter) until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, until the dough comes together.
- Shape into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
- Prepare the Filling:
- Mix your chosen filling ingredients in a bowl. Adjust seasoning as needed. Ensure the filling is cool before assembling.
- Assemble the Hand Pies:
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the dough on a floured surface to about ⅛-inch thick. Cut into 4-5 inch circles.
- Place a spoonful of filling in the center of each circle. Fold the dough over to form a semi-circle and press the edges together with a fork to seal.
- Add Egg Wash:
- Brush the tops of the pies with the egg wash for a golden finish. Use a knife to make a small slit on top for steam to escape.
