Savory Hand Pies


Ingredients:

Dough:

  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 cup cold unsalted butter, cubed
  • 6-8 tbsp ice water

Filling (choose one or mix!):

  • Vegetarian: 1 cup sautéed mushrooms, ½ cup ricotta cheese, 1 cup spinach, salt, and pepper.
  • Meat: 1 cup cooked ground beef or sausage, ½ cup shredded cheese, 1 small diced potato (pre-cooked), and seasonings.
  • Chicken: 1 cup shredded rotisserie chicken, ¼ cup cream cheese, 1 tbsp buffalo sauce, and chopped scallions.

Egg Wash:

  • 1 egg, beaten
  • 1 tbsp milk

Instructions:

  1. Prepare the Dough:
    • In a food processor or bowl, combine flour and salt. Add cold butter and pulse (or use a pastry cutter) until the mixture resembles coarse crumbs.
    • Gradually add ice water, 1 tablespoon at a time, until the dough comes together.
    • Shape into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
  2. Prepare the Filling:
    • Mix your chosen filling ingredients in a bowl. Adjust seasoning as needed. Ensure the filling is cool before assembling.
  3. Assemble the Hand Pies:
    • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • Roll out the dough on a floured surface to about ⅛-inch thick. Cut into 4-5 inch circles.
    • Place a spoonful of filling in the center of each circle. Fold the dough over to form a semi-circle and press the edges together with a fork to seal.
  4. Add Egg Wash:
    • Brush the tops of the pies with the egg wash for a golden finish. Use a knife to make a small slit on top for steam to escape.
  5. Bake:
    • Arrange the pies on the prepared baking sheet and bake for 20-25 minutes or until golden brown.
  6. Serve:
    • Let cool slightly before serving. Enjoy warm or at room temperature!
